I added some fresh cilantro on hand to the panko breadcrumbs for a little extra flavor. It is a good idea to salt these right after they come out of the oven. Really delicious!
1 egg, beaten
1 cup bread crumbs
1/2 tsp salt
Preheat your oven to 450 degrees F. In a medium-sized bowl, mix together the bread crumbs, salt and any additional seasonings you’d like to add. Set it aside. Cut the avocados in half, remove the pit and then slice them vertically into 1 inch wedges. Scoop the wedges out carefully with a spoon. Set them aside.
Dredge the avocado in the beaten egg, then in the breadcrumb mixture.
Place the breaded avocado slices on a baking sheet lined with parchment paper or silicone baking mat. Bake for 15 minutes or until the bread crumbs have turned golden. Serve immediately.
