I found an incredible baked oatmeal recipe online and doubled it for 2 servings. This is a quick recipe to put together and we love the smell when it’s baking. Makes a fantastic breakfast dish with pantry staples.
2/3-1 cup each of old fashioned oats, milk, and water
1-2 bananas (1/2 mashed, 1/2 sliced and reserved)
splash of vanilla
dash of cinnamon
sprinkle of raisins & chopped walnuts
sprinkle of cinnamon sugar (optional)
Preheat oven to 375 F. Combine ingredients from oats to walnuts, and pour into an oven safe dish.
Arrange reserved banana slices on top and bake for 25 minutes.
Remove dish from oven and sprinkle top with cinnamon sugar. Place under broiler until golden brown.
Serve immediately or store in the fridge overnight and microwave for 1.5 minutes in the morning.
