I’ve been making salad dressing at home lately and it’s been a lot of fun (and very delicious!) to experiment and play with different combinations. Balsamic vinaigrette is in the top two favorites I have at the moment, along with a red wine vinaigrette with garlic. Yumm!
Looking around online for different balsamic concoctions, I came across this dressing recipe on food.com. We both love this dressing’s flavor and it’s simple to make. The trick is to slowly drizzle the olive oil into the dressing while whisking. All of the olive oil should be incorporated into the dressing, if it’s not, just keep whisking and check it again.
Yields: 1/2 cup
2 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon light brown sugar
1-2 garlic cloves, minced (optional)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3-4 tablespoons extra virgin olive oil
In a medium bowl, combine all ingredients except olive oil together using a whisk. Slowly drizzle olive oil into the mixture and mix well with whisk until blended.
