It’s been a pretty busy year so far and I wasn’t able to cook as much for a while. Now I’m back in the kitchen trying a bunch of new recipes from the world of the internets.
Latest one was this morning, and I already got one shinning review – “I could eat all of these.” Yay!
Blueberry muffins with banana mixed into the batter and brown sugar. Oh, so good. You’re gonna want to try these!
2 medium ripe bananas, peeled and mashed
1 cup brown sugar, packed
½ stick of butter, melted
½ cup applesauce
1 tsp vanilla extract
2¼ cups flour
½ tsp salt
½ tsp ground cinnamon
2 tsp baking powder
1 cup fresh blueberries
Using a hand or stand mixer, combine mashed bananas, eggs, brown sugar, butter, applesauce and vanilla extract until well blended. Combine flour, baking powder, cinnamon and salt in another bowl and slowly add flour mixture. Stir in blueberries.
Spoon into muffin cups.Bake in 350 degree oven for 25-30 minutes or until golden brown. Let them cool for about 5 minutes in the pan, then serve while warm. This recipe makes 12 good sized muffins.
