This kale recipe reminds me a lot of cooked spinach, but with the extra flavors that the veggie broth bring. I believe I used latacino kale for this recipe and loved the results! Easy to prepare and delicious!
1 teaspoon olive oil
1 cup diced onions
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon red pepper flakes
2 tablespoons minced garlic
8 cups (packed) stemmed and torn or chopped kale leaves
2 cups vegetable broth
juice of 1/2 a lemon
Heat the oil in a large skillet over medium heat. Add the onions, salt, pepper, and red pepper flakes and cook, stirring for 5 to 7 minutes. Add the garlic, kale, and stock and cook, stirring occasionally, for 8 to 10 minutes, or until kale is tender. Remove from the heat and add lemon juice and season to taste. Serve immediately.
