Homemade cilantro lime rice is so much tastier than at the local burrito joint. This flavor combo is outstanding made fresh and easy to put together, I’m sure it will become a recipe we make regularly.
This recipe can also be made with brown rice, which cooks longer than white rice so check the package directions to be safe. Both are super delicious!
1 Tablespoon olive oil
1 cup long-grain white rice
2 cups low-sodium vegetable broth
1/4 teaspoon salt
1/2 cup chopped cilantro
1 medium lime, zest and juice
Heat oil in a medium sauce pan over medium heat. Add rice, stir to coat, and fry until slightly golden. Add broth and salt and increase heat and bring to a boil. Stir, reduce heat to medium-low, cover and cook 20 minutes.
Remove from heat and let stand 10 minutes before removing the lid. Fluff rice with fork and stir in lime zest, juice and chopped cilantro.
