Cilantro Lime Rice

Homemade cilantro lime rice is so much tastier than the local burrito joint. This flavor combo is outstanding made fresh and easy to make, I’m sure it will become a recipe we make regularly.

1 1/2 Tablespoons olive oil
1 cup long-grain white rice
2 cups low-sodium vegetable broth
1/4 teaspoon salt
1/2 cup chopped cilantro
Grated rind of 1 medium lime and the juice of the lime

Heat oil in a sauce pan over medium heat; add rice, stirring to coat.
Add broth and salt; increase heat and bring to a boil. Stir once.
Reduce heat to medium-low; cover and cook 20 minutes.
Remove from heat and let stand 10 minutes.
Fluff rice with fork and stir in lime rind, juice and cilantro.
