I am really excited to share this recipe because it is easy to make and it is super delicious. This chickpea salad is very flavorful and satisfying. These sandwiches are great for lunch but I’ve also made them for a quick dinner as well. I cut this recipe down from the original to make fewer sandwiches.
Makes 3 – 4 large sandwiches
3 Tbsp. vegan mayonnaise
1 1/2 tsp. curry powder
3/4 tsp. fresh lemon or lime juice
salt and black pepper, to taste
1 1/2 cups (15 oz) chickpeas, cooked or canned (garbanzo beans)
1/4 cup chopped walnuts or pecans
2 tsp. chopped raisins
1 green onion, chopped
optional: 1 celery stalk, diced
6 – 8 slices of whole grain bread
In a medium bowl, whisk together the mayo, curry powder, lemon or lime juice, salt and pepper.
Place drained and rinsed chickpeas in the bowl of a food processor and pulse to roughly chop. Add the chickpeas to the mayo mixture and stir to combine. Add chopped pecans, raisins, green onion and celery, if using and stir to combine.
Serve on a sturdy whole-grain bread with your favorite greens and thinly sliced red onion, if desired.
