Enchilada Casserole

This is a really easy and fun recipe to make. You can add your favorite additional ingredients like black beans, diced onion, corn, etc. It’s fun and easy to get creative with this recipe.

12 – 15 corn tortillas, cut up
1 can enchilada sauce (14.5 oz.)
8 oz. Mexican blend cheese, grated (or use your favorite cheese)
1 can diced tomato and green chile (14.5 oz.)

Preheat oven to 450 degrees F. Spray 2 1/2 quart baking dish with non-stick spray.
Combine all ingredients in a large bowl and pour into baking dish. Cover with plastic and microwave for 5 minutes then remove plastic. Bake for 10 minutes or until the cheese is bubbly.

Notes: I forgot to spray the glass baking dish and it didn’t stick. Also, my baking dish wouldn’t fit in the micro, so I just baked it and it came out fantastic.
