I have a habanero pepper plant that has produced a ton of peppers this summer so I’m making all kinds of spicy things to eat! This is a great recipe and you can easily substitute your favorite pepper.
4 small ripe tomatoes, chopped
1/4 cup red onion, minced
2 tablespoons cilantro, chopped
2 tablespoons parsley, chopped
2 cloves garlic, finely chopped
1/4 teaspoon ground cumin
2 teaspoons fresh lime juice
1 habanero pepper; finely chopped
Mix all ingredients together. Season to taste with salt.
Pulse in blender if you want semi-chunky or smooth salsa. Optionally, add 1 small can of tomato paste to your blender.
