2 8-oz. cream cheese blocks, softened
3/4 cup sugar
1 teaspoon vanilla
1 Tablespoon lemon juice
paper or foil baking cups
cherry pie topping (optional)
Beat first 5 ingredients well using an electric mixer. Place a Nilla wafer in the bottom of each baking cup. Fill each cup about 2/3 full with cream cheese mixture. Bake at 375 degrees F for about 17 minutes.
Top each cheesecake with a spoonful of cherry pie topping when cool, if using. Makes 18-20 cheesecake cups.
