We’ve been eating quite a few carrots recently since they usually show up in our veggie box. This recipe was really well received & you can scale it up or down as needed for as many carrots as you want to use or number of people you need to feed. Enjoy!
Makes: 2 servings
Total Time: 10 minutes
Juice of 1 lemon
1 tablespoon extra-virgin olive oil
1 clove garlic, minced
1/8 teaspoon salt
Freshly ground pepper, to taste
1 cup shredded carrot
1 1/2 tablespoons chopped fresh dill
1 tablespoon chopped scallion or green onion
Whisk lemon juice, oil, garlic, salt and pepper to taste in a medium bowl. Add carrots, dill and scallion; toss to coat.
