Pan Fried Potatoes

I scaled this recipe down to serve 2 for a fantastic holiday breakfast with eggs. We used extra cracked black pepper to make the potatoes a little spicy. These are very tasty and easy to make. Will definitely use this recipe again!

2 medium potatoes
2 Tablespoons olive oil
1/3 of a medium yellow onion, diced
Sea salt and pepper to taste

Wash and peel potatoes, dice somewhat small. Heat oil in frying pan. Add potatoes to the frying pan and mix to coat and cover with a lid. Turn heat to medium. Cook for approximately 15 minutes, turning the potatoes occasionally and add black pepper in the middle. Place onions on top and let cook for 5-10 minutes, stirring a few times. Potatoes should be done in approximately 20-25 minutes. Season to taste with salt and pepper. Place potatoes on paper towel to soak up any extra oil.
