I really love this appetizer recipe and they are so easy to put together. The first time I tried it, I was using up some leftover sauce and french bread. I used some leftover basil pesto sauce in place of the fresh basil on french bread slices and it was delicious (below). The sauce discolored a tiny bit while baking, so I tried again with fresh basil and a French baguette (above). I have to say, both versions are very, very yummy.

Makes: about 20 appetizers (or about 12 if using french bread)
1/2 cup fresh basil, finely chopped
1/2 cup shredded Parmesan cheese (2 oz.)
6 tablespoons mayonnaise
1 – 2 garlic cloves, minced
1 French baguette, cut into 1/4 inch slices
Combine the basil, cheese, mayonnaise and garlic in a bowl and mix well. Set aside.
Arrange the plain baguette slices in a single layer on a cookie sheet. Broil the bread slices in the oven until light brown.
Remove from the oven, turn the slices over and spread with the cheese mixture. Return the pan under the broiler and broil until light brown and heated through, which really only takes about 1 to 2 minutes (keep a close eye on the bread during both toastings because it’s really fast).
Serve immediately. Gobble them up!
