The flavor combo in this recipe is surprisingly delicious. We love these potato patties with or without yogurt topping.
1 8-oz. sweet potato
1 8-oz. russet potato
3 tablespoon grated onion
2 large eggs, beaten
2 tablespoon finely chopped cilantro
1 tablespoon all purpose flour
2 teaspoon curry powder
1 teaspoon salt
2 tablespoon vegetable oil
1 cup Greek yogurt, for topping (optional)
Peel both potatoes and coarsely grate into medium bowl. Place grated potato and onion in a clean cloth and squeeze out excess liquid. Place in a large bowl and add eggs, cilantro, flour, curry powder, and salt, mix to incorporate evenly.
Heat oil in large skillet over medium-high heat. use about 1/4 cup and form into a ball, add to skillet. Gently flatten ball with spatula to about 1/3-inch thickness. Add about 3 more cakes and fry about 3 minutes each side. Keep warm in oven set at 300 degrees F til ready to serve.
