This is an oil-free recipe that uses the steam of the cooking vegetable to stick the seasoning to it. It is super simple, healthy and delicious. I love the nutty flavor of roasted cauliflower and the Italian seasoning is a perfect addition. This is my new favorite way to prepare cauliflower, with a close second to Curried Cauliflower Soup, yum!
1 head cauliflower, cut into bite sized pieces
1 Tablespoon Italian seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/8 teaspoon fresh cracked black pepper
big pinch of salt
Preheat your oven to 425 degrees F. Line 1 or 2 baking sheets with parchment paper or silicone baking mats. Put the bite sized pieces of cauliflower on the pan in a single layer on 1 – 2 pans, depending on the size of your cauliflower. Pop the baking sheet(s) into the oven.
Bake for 20 minutes. If you’re using 2 pans, switch them halfway through baking (after 10 minutes). While the cauliflower is baking, mix all the seasonings together in a small bowl. After 20 minutes is up, remove from the oven and leave the oven on.
Toss the hot cauliflower with the seasoning blend until coated. Put the cauliflower back on the baking sheet(s) and bake for another 10-15 minutes, or until they are as golden brown as you like.
