Snickerdoodle Cookies

The dough for this recipe needs to be refrigerated for at least 2 hours, so plan accordingly.

2 sticks margarine, at room temp
1 1/2 cups sugar
2 eggs, at room temp
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon vanilla

cinnamon sugar mixture: 2 tablespoon sugar & 2 – 4 teaspoons cinnamon

Cream the margarine and sugar, add eggs one at a time, scrape sides of bowl if needed.
Mix dry ingredients in a separate bowl and add slowly until everything is incorporated.
Cover with plastic wrap and refrigerate for at least 2 hours.

Preheat oven to 400 degrees F.

Roll dough into approx. 1-inch balls, roll in the cinnamon sugar until covered and place on un-greased cookie sheet, bake about 8 – 10 minutes until just barely golden brown.
Cool on the cookie sheet for crisper cookies, transfer to rack after 2 mins for softer cookies.

Makes approx. 3 – 4 dozen
