Sweet Potato Souffle

This is a great sweet potato recipe that I altered a little from the original based on reviewer’s suggestions. The potatoes alone are so tasty you won’t miss the marshmallows.

3 large sweet potatoes
2/3 cup brown sugar
2 eggs beaten
1/2 teaspoon salt
5 Tablespoons butter
1/2 cup evaporated milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 cup chopped pecans

Peel and dice sweet potatoes, boil 15-20 minutes until tender.

Preheat oven to 350 degrees F. Drain potatoes and whip using an electric mixer. Add sugar, eggs, salt, butter, milk, vanilla and spices. Mix well and put in a greased 1 1/2 quart casserole. Bake for 25 minutes. Place pecans on top and return to oven for about 5-10 minutes.
